Grown between 1,100 and 1,250 meters on Fazenda São Silvestre, one of the Andrade family's two estates in Carmo da Paranaíba, this Yellow Icatu lot is pulped natural — cherries pulped to remove the outer skin, then dried slowly with the mucilage intact. Expect caramelized notes, hazelnut, and a velvety, round body with a clean, lingering finish.

Process Method
- 01
First, the coffee varietal best suited to the process is chosen. Yellow Icatu was selected for this lot for its cup quality and sweetness potential.
- 02
After varietal selection, the harvest team hand-picked only the ripe cherries from this varietal.
- 03
The ripe cherries were pulped to remove the outer skin, leaving the mucilage intact on the parchment, then dried slowly and evenly until reaching the target moisture content.
