Grown at 1,100 meters on Fazenda Capim Branco, one of the Andrade family's two estates in Carmo da Paranaíba, this natural-process Paraíso lot (screen 16 up) was selected for its high sugar content, confirmed with a refractometer before hand-picking the ripest cherries. Expect citrus and yellow fruit sweetness, honey, and a creamy, dense body with a consistent, pleasurable finish.

Process Method

  1. 01

    First, the coffee varietal best suited to the process is chosen. Due to the high level of glucose and fructose in the coffee cherry — confirmed with a refractometer — the Paraíso varietal was selected.

  2. 02

    After varietal selection, the harvest team hand-picked only the ripe cherries from this varietal.

  3. 03

    The ripe cherries were left whole with the skin intact and spread out to dry as natural process coffee, developing sweetness and body as the fruit dries around the bean.

  4. 04

    The cherries were then moved to raised beds to dry slowly over 25 days, turned regularly for even drying. Slower drying promotes greater uniformity of the coffee beans.
