Grown at 1,100 meters on Fazenda Capim Branco, this natural-process Laurina lot (screen 16 up) was selected for its high sugar content, confirmed with a refractometer, then dried slowly in a dark room over 45 days for greater uniformity. Expect intense red fruit and honey sweetness over a creamy, dense body.

Process Method

  1. 01

    First, the coffee varietal best suited to the process is chosen. Due to the high level of glucose and fructose in the coffee cherry — confirmed with a refractometer — the Laurina varietal was selected.

  2. 02

    After varietal selection, the harvest team hand-picked only the ripe cherries from this varietal.

  3. 03

    After fermentation, the coffee cherries were moved to a dark room to dry slowly over 45 days. Slower drying promotes greater uniformity of the coffee beans.
